In the morning I was experimenting with a little of the ingredients I had left at work for breakfast. I made my typical chocolate paste out of unsweetened chocolate, stevia and coconut milk. I am actually realizing slowly by trial and error that coconut is just NOT good for me. My stomach reacts poorly no matter what it is - coconut oil, coconut flakes or milk. Not repurchasing again! Anyway, could me replaced by any other unsweetened milk (soy is my favorite). Then I took two slices of brown rice cakes and spread the choco paste in between them! Genius! I got an awesome sandwich cookie that is crispy, fresh, sweet and filling at the same time! Love

Choco coco bar
I made these amazing bars today just by improvising and experimenting with a bunch of my ingridient leftovers )) Came out pretty awesome for a sweet bite!
For a first layer you'll need:
1/2 cup coconut oil
1/2 cup sunflower butter
4 packs of stevia powder
6 Tablespoons of cocoa powder
Second layer:
3 tablespoons coconut oil
3 tablespoons applesouce
1,5 cup coconut flakes
Vanilla
Cinnamon
What to do:
First melt oil with butter, steer together. Add cocoa and stevia. Mix and pour into an 8x8" or 9x6" pan, and place it in your freezer while making the second layer.
Melt oil and add all the rest of the ingridients so it gets smooth. Place on top of the lower layer and place it back in a freezer for another 15 min. Cut into squares. Keep refridgerated after. Enjoy! ))

Non-dairy brownies with stevia
Made these a few times already! Quick, easy and go away faaaast ))
You will need:
1. 1/2 cup all purpose flour (mine is gluten-free)
2. 1/3 cup unsweetened cocoa powder
3. 1/4 teaspoon salt
4. 1/2 cup of vegan shortenings
5. 1 teaspoon of liquid stevia
6. 1 teaspoon of vanilla extract
7. 2 eggs
8. 1/2 cup of unsweetened baking chocolate
9. 1/2 cup crushed wallnuts
What to do:
Firstly, melt chocolate together with vegan butter in a heatresistent bowl over a simmering water till it all melts and gets even.
Take off the heat, whisk in eggs one by one. Add vanilla and stevia. Then mix in flour, cocoa powder, salt and walnuts. Mix it all till it evens out. Pour the batter into a 9x9 baking pan and bake it at 350 degrees for about 25-30 minutes. 25 if you like chewy brownies and 30 if you like them more crunchy. Enjoy!
