Something new

Just came up with a new recipe!

So I must grocery shop today because I'm out of pretty much everything!)) No chocolate, no coconut, no bananas... I had to make something to satisfy my sweet tooth with a cup of tea, and all ingredients I could reach for in my drawers were applesauce, coconut oil, gluten-free flour, eggs and spices. So I just combined all of these together as so:

1 cup unsweetened applesauce
1 cup all purpose gluten-free flour
1 egg
1 teaspoon stevia
1/4 cup coconut oil
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon vanilla
1 teaspoon baking soda

Mixed it all together till smooth and baked for 30 minutes in 350 degrees.

P.S. Came out DELICIOUS!!!

My own milk chocolate

Hey! ))
So I've been craving chocolate lately and end up making it almost every day. It's very quick and much healthier than any store version out there. All you need is 2oz of unsweetened 100% chocolate, 1/2 teaspoon of coconut oil, 1/4 cup of soy or any other dairy free milk and 3 packs of stevia.
Warm up milk with chocolate squares in the microwave or on the stove (your choice) and mix them into a thick light brown paste. Add other ingredients in and put in the fridge for 5-10 minutes. You get a lovely thick milk chocolate paste. You could add nuts to it if you like or coconut flakes.
Btw, I realized recently that I have a nut allergy as well (ugh!) that shows up on my skin so I am avoiding them as much as possible. If you don't then indulge! ))

Choco coco bar

I made these amazing bars today just by improvising and experimenting with a bunch of my ingridient leftovers )) Came out pretty awesome for a sweet bite!

For a first layer you'll need:

1/2 cup coconut oil
1/2 cup sunflower butter
4 packs of stevia powder
6 Tablespoons of cocoa powder

Second layer:

3 tablespoons coconut oil
3 tablespoons applesouce
1,5 cup coconut flakes
Vanilla
Cinnamon

What to do:
First melt oil with butter, steer together. Add cocoa and stevia. Mix and pour into an 8x8" or 9x6" pan, and place it in your freezer while making the second layer.

Melt oil and add all the rest of the ingridients so it gets smooth. Place on top of the lower layer and place it back in a freezer for another 15 min. Cut into squares. Keep refridgerated after. Enjoy! ))

Bread pudding

This is a great recipe to spoil your family during the Holidays. It became a tradition for me to make it during the cold months and I love doing it. It is fast, easy, and best of all, delicious! Unfortunately, due to my Candida diet I won't be able to share it with everyone this year, but I still am a big fan ))

Take half a pack of sliced white bread of any kind (about 7-8 slices). Cut all of them into small cubes. Place them in a baking pan. In a seperate bowl bit 4 eggs with 1 cup of sugar till fluffy, add vanilla extract, cinnamon, nutmeg, 4 cups of milk, 1/2 cup raisins and 2 Tablespoons of melted butter. Mix it all well and pour onto cubes in a pan so that the whole bread is covered evenly. Bake at 300 for an hour. Enjoy!
