Sandwich cookie
In the morning I was experimenting with a little of the ingredients I had left at work for breakfast. I made my typical chocolate paste out of unsweetened chocolate, stevia and coconut milk. I am actually realizing slowly by trial and error that coconut is just NOT good for me. My stomach reacts poorly no matter what it is - coconut oil, coconut flakes or milk. Not repurchasing again! Anyway, could me replaced by any other unsweetened milk (soy is my favorite). Then I took two slices of brown rice cakes and spread the choco paste in between them! Genius! I got an awesome sandwich cookie that is crispy, fresh, sweet and filling at the same time! Love

Hair alert!

Lately all I've been eating is vegetables and fruits nonstop! Like practically munching on them! No particular food during the day except carrots, zucchini, celery, avocado, apples, banana and cucumber. Not sure why exactly this is all my body craves but I can't complain. Fruits and veggies make you feel fuller and less hungry due to the amounts of fiber they consist of. Amazing trick! Hungry? Get these mini carrots (preferably organic - they taste better!) and dip them into hummus for fun if you like. Craving sweets? Get a pear, cut it into small pieces and eat it with a fork. It gives your mind an idea of a dessert since you're actually using kitchen supplies but at the same time all you're eating is healthy ))

Colorful lunch
Great healthy foods to brighten up the freezing cold!
I buy this hummus every time I visit Trader Joe's, which is at least once in two weeks. It comes as a quartet out of four different flavors and all of them are made out of natural organic ingredients. I love dipping celery sticks and carrots in it, as well as zucchini or cut peppers. Of course it is also a great snack with chips that I can't have (( but I use rice cakes instead.

My only cocktail forever
If you want to get tipsy without doing too much harm to your body;
If you don't want to be hangover the next day after having fun;
If you don't want to consume too many calories while having cocktails;
If you don't want to be swollen like a balloon the morning after;
Then have my favorite cocktail of all times! I've tested it for a few times already.
It's pure vodka with sparkling seltzer water! No ice, no nothing! You could add a piece of lime for some flavor if you like. Just a plain colorless sugar-free drink that will keep you feeling good into the next day. Guarantee! No headaches, no dry mouth, no irritation, nothing! Try it for yourself the next time you go out. And rule number one - no mixing!
Enjoy your youth!

Biscuits
Just made a small bunch of 6 delicious biscuits for breakfast. The texture came out puffy and great with coffee!
You need:
3 eggs
1/4 cup coconut flour
1/4 tspn salt
2 tspn coconut oil
1 tspn lime or lemon juice
30 drops of liquid stevia
1/4 cup water
1/2 tspn baking soda
What to do:
1. Separate yolks from whites
2. In a small bowl mix 3 yolks with coconut flour, coconut oil, lemon juice, water, salt and stevia together
3. Bit up the whites in a separate bowl until stiff
4. Add baking soda to the yolk and mix till even
5. Start adding half of the whites into the yolk mix till fluffy
6. Spoon it into your preferred muffin pots
7. Bake at 350 for 15 minutes.
Enjoy!

Food diary
Yesterday was one of those single rare days when my stomach didn't react to food as much as usual. For my own sake I should write it down. I had:
Breakfast:
2 egg omelette with tofu
Lunch:
1 sweet pepper roasted
1 cucumber
1 tomato chopped
2 chicken white breasts
1/2 brown rice
Dinner snack:
2 unsweetened chocolate slices with 20 drops of stevia and soy milk

Something new
Just came up with a new recipe!
So I must grocery shop today because I'm out of pretty much everything!)) No chocolate, no coconut, no bananas... I had to make something to satisfy my sweet tooth with a cup of tea, and all ingredients I could reach for in my drawers were applesauce, coconut oil, gluten-free flour, eggs and spices. So I just combined all of these together as so:
1 cup unsweetened applesauce
1 cup all purpose gluten-free flour
1 egg
1 teaspoon stevia
1/4 cup coconut oil
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon vanilla
1 teaspoon baking soda
Mixed it all together till smooth and baked for 30 minutes in 350 degrees.
P.S. Came out DELICIOUS!!!

My own milk chocolate
Hey! ))
So I've been craving chocolate lately and end up making it almost every day. It's very quick and much healthier than any store version out there. All you need is 2oz of unsweetened 100% chocolate, 1/2 teaspoon of coconut oil, 1/4 cup of soy or any other dairy free milk and 3 packs of stevia.
Warm up milk with chocolate squares in the microwave or on the stove (your choice) and mix them into a thick light brown paste. Add other ingredients in and put in the fridge for 5-10 minutes. You get a lovely thick milk chocolate paste. You could add nuts to it if you like or coconut flakes.
Btw, I realized recently that I have a nut allergy as well (ugh!) that shows up on my skin so I am avoiding them as much as possible. If you don't then indulge! ))

Choco coco bar
I made these amazing bars today just by improvising and experimenting with a bunch of my ingridient leftovers )) Came out pretty awesome for a sweet bite!
For a first layer you'll need:
1/2 cup coconut oil
1/2 cup sunflower butter
4 packs of stevia powder
6 Tablespoons of cocoa powder
Second layer:
3 tablespoons coconut oil
3 tablespoons applesouce
1,5 cup coconut flakes
Vanilla
Cinnamon
What to do:
First melt oil with butter, steer together. Add cocoa and stevia. Mix and pour into an 8x8" or 9x6" pan, and place it in your freezer while making the second layer.
Melt oil and add all the rest of the ingridients so it gets smooth. Place on top of the lower layer and place it back in a freezer for another 15 min. Cut into squares. Keep refridgerated after. Enjoy! ))
